Chocolate Slice Recipe

If you need a chocolate hit here is how you can make some healthy and delicious chocolate bar alternatives at home using the same simple recipe. It's also freezer friendly so if you get carried away you can cut it, wrap it and save it for later. 

Don't be afraid to use what ever you have at home or adjust the recipe to suit you. 

You will need;

-A baking tray or silicone mold; something loaf tin sized. This makes them easy to cut into equal sized pieces. Or you can use an ice cube tray for bite sized ones...its just a bit more fiddly. 

-Mixed nuts, seeds and fruit. For my recipe I used roughly chopped cashews, macadamias, coconut chips, dried blueberries and fresh strawberries. 

-Coconut oil about 1 cup

-Cacao (or coco) powder 1/4 cup

-Sweetener of choice such as rice malt. I used soaked dates.

-Tspn vanilla ess & pinch of salt

-A mixing bowl and whisk 

 

How to:

Fill the bottom of your chosen tray with your fillings of choice, so the bottom of the tray is full. 

If your Coconut oil is solid, soften it but putting it in a bowl and sitting the bowl in warm water. Or if your coconut oil comes in a glass jar you can sit that in warm water and tip out the required amount of liquid oil. 

In your mixing bowl mix the liquid coconut oil with the cacao/coco, vanilla ess and pinch of salt. Add sweetener to taste, rice malt syrup is a low fructose sweetener. Add slowly as its very sweet. I used 5 dates soaked in 1/4 cup boiling water, mashed them up, strained the dates out and used the liquid. 

Once combined, pour the coconut oil & cacao mixture over the mixed fruit and nuts and refrigerate for a couple of hours until solid. Remove from the tin and chop into chunks. Keep them in the fridge or freezer as coconut oil melts easily! 

 

Tips;

If  your going through this at a rate of knots or just want a less expensive alternative use coco (unsweetened) instead of cacao (not quite the same health benefits but often much less expensive). You can also use desiccated coconut and frozen berries as a less expensive fillings. 

Consume in moderation as this is high in fat due to the nuts and coconut oil.

 

Other flavor combos to try;

-Activated buckinis and 2 tsp of peppermint essence for peppermint crunch

-Frozen raspberries and coconut chips

-Pistachios, almonds and chopped dried figs for something fancy

-Macadamia, strawberry and coconut

-Fresh and dried blueberries
